Creamy Honey Cornbread with Chilies
A sweet and savory cornbread featuring honey, cream-style corn, and diced green chilies, baked to perfection in a cast-iron skillet.
Method
- Preheat your oven to 400°F (200°C). Place a 10-inch cast-iron skillet in the oven to heat.
- In a large mixing bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, whisk together cream-style corn, diced green chilies, eggs, buttermilk, and honey until well combined.
- Carefully remove the preheated skillet from the oven and add the melted butter, swirling to coat the bottom and sides.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing; a few lumps are fine.
- Pour the batter into the hot, buttered skillet.
- Return the skillet to the oven and bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool slightly before serving. Drizzle with honey for an extra touch of sweetness, if desired.
Notes
This cornbread pairs perfectly with hearty bean dishes or as a stand-alone treat with a bit of butter and honey.
