Creamy Honey Cornbread with Chilies

A sweet and savory cornbread featuring honey, cream-style corn, and diced green chilies, baked to perfection in a cast-iron skillet.

Method

  1. Preheat your oven to 400°F (200°C). Place a 10-inch cast-iron skillet in the oven to heat.
  2. In a large mixing bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar.
  3. In a separate bowl, whisk together cream-style corn, diced green chilies, eggs, buttermilk, and honey until well combined.
  4. Carefully remove the preheated skillet from the oven and add the melted butter, swirling to coat the bottom and sides.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing; a few lumps are fine.
  6. Pour the batter into the hot, buttered skillet.
  7. Return the skillet to the oven and bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  8. Let cool slightly before serving. Drizzle with honey for an extra touch of sweetness, if desired.

Notes

This cornbread pairs perfectly with hearty bean dishes or as a stand-alone treat with a bit of butter and honey.
